What is a Certified Dietary Manager, Certified Food Protection Professional (CDM, CFPP)?

A Certified Dietary Manager, Certified Food Protection Professional (CDM, CFPP) is an expert at managing foodservice operations and ensuring food safety. They are responsible for implementation of menus, foodservice purchasing, and food preparation. They apply nutrition principles, document nutrition information, and manage work teams. A CDM, CFPP:

  • Has the education and work experience to competently perform the responsibilities of a dietary manager and has proven this by passing the nationally recognized CDM, CFPP Credentialing Exam and fulfilling the requirements needed to maintain certified status.
  • Works together with Registered Dietitian Nutritionists (RDNs) to provide quality nutritional care for clients in a variety of non-commercial settings and perform a myriad of specialized tasks and roles within a foodservice operation.
  • Is an expert at managing foodservice operations and ensuring food safety. 
  • Is responsible for implementation of menus, foodservice purchasing, and food preparation as well as applies nutrition principles, documenting nutrition information, managing work teams, and much more.

Employment Possibilities 

Certified Dietary Managers, Certified Food Protection Professionals(CDM, CFPP) are nationally recognized experts at managing dietary operations. Many work in health care—nursing facilities, rehabilitation centers, senior living communities, or hospitals. Some work in correctional facilities, schools, and the military. Others work for corporations.

 

Program Admission

Program Outcomes and Data

Outcomes data of the Certified Dietary Managers, Certified Food Protection Professionals (CDM, CFPP) are available upon request. 

 

Program Requirements

This is a certificate of achievement program that includes:

  • 8 classes (23 units) - See Course Catalog for specific requirements
  • 150 hours (NC 175) of appropriately precepted field experience components. A Registered Dietitian Nutritionist coordinates all field experience hours and precepts at least 25 of those hours. 

Learning in the program is sequential. Students must successfully complete the first semester courses prior to advancing to the second semester. In order to successfully complete the program and graduate, students must earn a grade of 'C' or better in all required classes. Students must also complete 150 hours of field experience and entry-level competencies.

 

Length of Program

For full-time students, the length of the program is 2 semesters. Part-time students will take longer to graduate. To follow the sequence of classes, students should start their first semester in the fall.

  • NC A180 Introduction to Medical Nutrition Therapy

The Dietary Manager program follows the Orange Coast College academic calendar.

 

Program Cost

The enrollment fee is $46 per unit. In addition, students pay a Health Fee and College Service Charge each semester. Other costs related to uniforms and travel to field experience may apply. Credentialing and Professional Membership

The Association of Nutrition and Foodservice Professionals (ANFP) is a non-profit association dedicated to providing nutritional care through foodservice. It is the professional organization for Certified Dietary Manager, Certified Food Protection Professionals (CDM, CFPPs). Students are eligible for Pre-Professional membership with ANFP.

  • Refer to the Certifying Board for Dietary Managers (CBDM) for all exam-related processes and policies.
  • ANFP approves ANFP Nutrition and Foodservice Professional Training Program providers.

Upon successful completion of all program requirements, graduates are eligible for the Certified Dietary Manager, Certified Food Protection Professional (CDM, CFPP) credentialing exam and ANFP professional membership.
